When we have overripe bananas I usually make smoothies or banana pancakes out of them. This time my intention was to make banana bread instead so we could enjoy it for breakfast in the morning. But my son had other ideas, so I lured him into the kitchen to make this banana cake from scratch. We don't like a cake heavy on frosting, so we ate it bare, but I'm thinking we might try a light cream cheese frosting next time. A few mini chocolate chips mixed into the batter might be another yummy variation.<br />

Ben has been helping me in the kitchen since he could stand. He's also taken a couple of kids cooking classes. He especially loves baking. He's known how to measure and level off flour since he was about 5. I love that he has these skills to carry him into life. He may not make a career out of it, but he'll be able to cook for himself.<br />

The cake is light and moist with a banana flavor that's not overpowering.<br />

Tip: If you don't have sour milk, add about 2tsp of vinegar to the cup of milk and let it sit for 5-10 minutes.<br />

Ben's Banana Cake</h4>

<li>1/2 c salted butter</li>
<li>1 c sugar</li>
<li>2 eggs</li>
<li>2 1/4 c flour</li>
<li>1/2 tsp baking soda</li>
<li>1 cup mashed banana. </li>
<li>1/4 c sour milk</li>
<li>1 tsp vanilla</li>
</ul>

Preheat over to 350 degrees. Cream the butter and sugar together. Add the eggs and mix well. Stir in dry ingredients. Add mashed banana, milk, and vanilla. Mix thoroughly. </div>

Pour batter into two 8 inch pans lined with parchment. Bake for 25-30 minutes, or until a toothpick comes out nearly clean. </div>

Let cool before removing from pan. If desired, frost or lightly sprinkle with powdered sugar. </div>

Make do - v. to use what you already have, to manage to get along with the means available.<br />

It seems that in this hyperconsumerism driven culture, we've lost the art of making do. Probably the last time we as a society collectively practiced making do was during the Great Depression and World War II. It was a survival skill that was quickly forgotten amongst the disposable world we live in today. Don't get me wrong. There are still people out there who know a thing or two about making do, mostly out of necessity. But the majority of our society has fallen into the mindset of discarding and buying new. Using something until it has no use left in it is a foreign concept.<br />
<br />
We are bombarded with commercials that tell us what we need to buy. Products are manufactured with disposal in mind. Big tech companies make it hard to repair their products, thus it becomes easier if you have the funds just to purchase new. Most things these days are manufactured to appear to become obsolete within a limited time, manipulating the consumer to buy the latest computer/phone/shoes, etc. And many items are manufactured for single usage.<br />
<br />
The clothing industry is a good example. Except for the rare knee patch on a kid's worn pair of jeans, most people no longer mend clothing or have the skill to do so. Unfortunately, most clothing doesn't even get to that stage before it's discarded or donated. Fast fashion has created a highly wasteful market. While I think it is important to donate and shop used, the used market has been overwhelmed as well. What we need to go back to is using up, mending, repairing. That is where the impact is going to make the biggest difference to the environment and to the current market.<br />

This past week I made a realization about making do when it comes to food. Money is tight right now. Really tight. I've been keeping us fed by making do and using up food staples I already have on hand. I'm amazed at how much food I have even though it doesn't feel like it. We get so accustomed to being able to make our weekly or monthly grocery shopping trip and when it doesn't happen we feel like we are lacking. In truth, most of us here in the U.S. have plenty in our pantries that we can use up before truly going hungry. We may be eating lots of boring rice, dried beans, and pasta, but we are not going hungry. When you are hit with hard times a well-stocked pantry and the ability to make do are a life saver.<br />
<br />
How can making do improve our lives? What if we learned to appreciate the fine wear of our shoes, the slight pull of a thread on our sweater, the miles displayed on our car's odometer, the harmless chip on our coffee mug? What if we saw the beauty in how much use an item still holds instead of allowing ourselves to be pulled in by the desire for something new? What if we learn truly be grateful for what we already have by using it up or wearing it out?<br />

Making do can make a big impact on our environment. We'll buy less stuff, which in turn means fewer resources will be used up and less pollution created during the manufacture of new items, as well as less of an impact from discarded items. Our money will go further and we can spend it on things that are truly fulfilling, like time with friends and family, traveling, or pursuing the things that feed our souls. It pairs nicely with minimalism in that we aren't going out and filling our homes with more unneeded stuff. And I suspect it encourages greater respect toward our possessions that lead us to care for them better so they will last longer.<br />

I have spent my grocery budget for the week and I'm out of detergent. The dirty clothes pile was looking very intimidating yesterday. Mainly because the kid had been hoarding his dirty laundry in the closet. I don't have any washing soda or ingredients to whip up my homemade detergent, but I do have a big bottle of Dawn dish soap someone gave me. I don't use that brand for dishwashing. I've mainly been using it to bath the dogs. So I Googled it. Can you use dish soap to wash your clothes? Yes and no. It depends on which type of washing machine you have. After reading several articles, it appears you can use it in a top loading machine but it's not recommended for the fancy front loading machines. One article recommends using 1tsp per size of the load. For a large load, you'd use 3 teaspoons of dish soap. </div>

Having a giant pile of clothes to wash, I gave it a go this morning, adding 3tsp to the first load. I was worried about excess sudsing but there wasn't any more than usual. After going through the entire wash process and loading them into the dryer, I am happy with the outcome. They are clean and smell fresh, even my son's smelly t-shirts. </div>

Shopping at the thrift store for me is part necessity, part adventure. I always feel like I'm on a treasure hunt. If I find something I need without paying full price for new, I am a happy camper. We have a thrift superstore nearby that I can spend a good two hours exploring, much to my son's frustration. I go there often and I also donate things that I no longer have a use for. It's always amusing when I see something familiar on the shelves.<br />

It's even better when I can make it on one of their super discount days. Certain days of the year they mark everything in the store down by 50% and they mark down certain color-coded tags throughout the year. Most thrift stores also give military and senior discounts. I am so used to thrift store prices that when I go to a store like Target I'm usually in sticker shock. You want how much for a new pair of shorts?<br />

Thrifting also has the added benefit of helping the planet. It saves a lot of usable merchandise from going to the landfill and puts a dent into the big problem of fast fashion, which has a lot of big environmental and humanitarian problems. 1. Picture frames and framed art</h4>

As a photographer, I'm always looking for nice wood picture frames for prints. Sometimes they have a less than attractive print already in them or need a paint job, but I have found some really beautiful frames that needed no attention at all at the fraction of the price you would buy new. </div>

While I would classify most of the art as cheesy or quaint, there are treasures to be found, so if you are looking to decorate some blank walls or change up your looks, the thrift store is a great place to go. You can also take a canvas that someone painted with an amateurish portrait, slap some gesso on it, and paint your own masterpiece. </div>

2. Clothing</h4>

While I purchase most of my clothing used, the big deals are for formal wear or designer jeans. You can save a bundle on prom dresses, cocktail dressed, and other formal wear that was likely only worn once. I've seen some beautiful wedding gowns as well. Designer jeans are another item that is expensive to purchase new and can easily run $100 or more. While I look for fit, comfort, and lack of wear over brand, I have picked up a pair of designer jeans for $12. That's quite a big markdown. I generally spend $5-7 for a pair of jeans at the thrift store. </div>

4. Kitchen Items</h4>

Dishes seem to be another item besides clothing that people donate in large quantities. If you are ever in need of coffee mugs, the shelves are usually lined with them. My son's favorite mug, an obvious Colorado souvenir someone decided to part with, came from thrifting. I've also found canning jars in excellent condition, nice looking wine glasses, table linens, and occasionally a rare treasure like a cast iron skillet or Le Creuset pan will show up. Avoid any old pottery or imported items that may contain lead.</div>

5. Furniture</h4>

The quality can vary, but you can save a bundle buying furniture at a thrift store. I tend to look for older wood pieces like end tables, small hutches, or chairs. As I've downsized, I've gotten rid of large furniture pieces like the two tiered corner office desk that took up half of any room and blocked a window. My current desk is an old vintage metal desk that is maybe 3'x1'. I spray painted the legs black and the sturdy top that golden yellow color that is so popular right now. I'm typing this blog post at my little desk right now. </div>

What do I avoid buying?</h4>

Most used shoes are a big no for me, unless they look new/hardly worn. I have read that shoes adapt to the wearer's feet, so they can be painful for someone else to wear. Orange Peel </h3>

Make an orange cleaner by filling a glass jar with orange peels and pouring white vinegar over them. Let the mixture sit in a dark, cool place for 2-3 weeks. Mine is under the kitchen sink. Use it full strength for tough cleaning jobs or dilute with water for an all-purpose cleaner. </div>

Coffee Grounds</h3>

I generally add mine directly into my garden, but coffee grounds as they contain many nutrients, but they can also be used as a body scrub to exfoliate the skin, make a great addition to homemade soap, and can replace baking soda in the refrigerator for odor control. You can even use them as a base to grow mushrooms in or start a worm farm.</div>

Vegetable Scraps</h3>

Outside of composting my vegetable scraps, another great idea is to freeze them until you have enough to make vegetable stock out of. When you have about 4 cups of vegetable scraps, boil them in about 12 cups of water. For added flavor, throw in some fresh herbs like rosemary, thyme, or sage. Avoid using too many scraps from strongly flavored vegetables like cauliflower and vegetables that have gone bad. </div>

Egg Shells</h3>

Unless it's gone moldy there is no reason to throw out stale bread. Use it to make bread crumbs or croutons for salads. Make a yummy bread pudding or french toast. Other recipes that are great for using up stale bread include French onion soup and the Italian recipe, Panzanella. </div>

I've been buying fresh milk from a local food co-op. Sometimes if I don't drink it fast enough it starts to go bad. I don't want to drink it, but I don't want to throw it away because it is expensive. As long as your milk hasn't gone chunky on you, there are still ways you can use it up. Use it in place of buttermilk or yogurt in recipes. It's also great for making homemade yogurt and cheese. </div>

The kid and I needed a slow Saturday morning with a big sitdown breakfast of eggs, bacon, and homemade biscuits. The last few weeks, with the exception of my daughter's beautiful wedding, have been rough. It seems like there has been one challenge after another since mid-February. But spring is here and the garden is starting to fill out. South Texas is blanketed with wildflowers. The days are longer. There is much to be grateful for.<br />

Sleeping in is hard around here. If it's not the dogs demanding to be let outside, the cat wants his breakfast or the chickens are cackling to be let out. So I was up by 7:30, which technically is sleeping in for a whole hour by weekday standards. I let the dogs out, fill the kettle so I can make coffee, dish out the dog food and cat food, and slip on some shoes to head out to the coop to let the chickens out for the day. By the time I head back in the house, I'm making coffee in my coffee press and starting breakfast.<br />

We have eggs just about every day in some form or another, especially with the girls laying pretty frequently now, but I rarely make biscuits. This particular recipe was shared by my friend Bryan. We both enjoyed cooking together while he lived with us. He was in charge of the biscuit making while I made soup or something to go along with the biscuits. Ben calls them Bryscuits, so forever more they will be known in our household by that name.<br />

A note about biscuit making. We were having some trouble getting the biscuits to rise nice and fluffy and after some investigation, I think I may have solved the issue. Apparently, according to the King Arthur Flour blog Flourish, when cutting biscuits it is important to use a sharp biscuit cutter or knife otherwise the dough pinches, preventing the biscuits from rising. Clean edges equal high rising biscuits.<br />

Bryscuits (Honey Butter Biscuits)</h3>

<ul>
<li>2 Cups plain flour</li>
<li>3 1/2 tsp baking powder</li>
<li>1/2 tsp salt</li>
<li>1 tsp cream of tartar</li>
<li>1 Tbsp honey</li>
<li>1/2 cup cold butter, cut into small cubes</li>
<li>2/3 cup milk</li>
</ul>

Preheat oven to 425F. Combine dry ingredients in a bowl. Add cold butter and using hands, work into the dry ingredients until the mixture resembles coarse cornmeal. Alternatively, you may use a food processor. </div>

Add honey and milk, mixing in with a wooden spoon or spatula. Gently knead dough and roll out to about 3/4" thick onto a lightly floured surface. </div>

Using a sharp knife or a biscuit cutter to cut biscuits into the desired shape. Bake for 15-20 minutes, until brown.</div>

Serve warm with butter and plenty more honey (or your favorite jam). </div>

I would like to show you around my little backyard homestead.<br />

Growing up in Ohio I was always used to putting in the garden around early April and almost ignoring it while still getting a good crop of vegetables. I've struggled with having a productive garden here in Texas for the last couple of years and I think it's mainly because I start my garden too late in the season. The plants don't have a good start before the heat sets in. This is the earliest I've ever planted a garden. It's in the spot where my original chicken coop used to be for the last few years so it's quite fertile. I'm feeling hopeful that this year I'll be able to harvest plenty to feed my son and me, and maybe even a little extra to share.<br />
<br />
I planted tomatoes, romanesco (if you don't know what this is, Google it. It is beautiful), lettuce, carrots, zucchini, cucumbers, dill, basil, spinach, thyme, and beets. I always plant marigolds to repel pests. The dill usually gets sacrificed to caterpillars. Five days from now I should have little sprouts coming up from the seeds I planted. I never cease feeling excitement and wonder at the little sprouts pushing up towards the sky. Life renewed.<br />

My old coop was a disaster and I worried nightly about predators getting in. One night a young opossum did get in and cornered one of my hens. Luckily I woke up to hear the screams my poor frightened girl was making. If you ever hear a chicken scream in fright you will never forget it. I ran out barefoot, scooped her up, and herded everyone into the kitchen where they spent the night. Everyone has kept chickens in their kitchen, right?<br />

The new coop is much nicer, but it was quite the challenge...<br />

I was excited to be the first in line when this coop came up as a freebie on a chicken group I'm in. The catch was I had to move it. The original person who was supposed to move it for me had a nice trailer and all of the equipment to properly move a building this size but he backed out last minute. I posted on Craigslist and found someone else who promised he could move the coop on the back of his truck. Moving day came and he was late meeting me at the site to pick it up. When he finally showed up he's driving an older pickup with a small bed. I had a bad feeling.</div>

I wish I'd saved the photo of the coop loaded onto his truck. It looked like Beverly Hillbillies moving into town. It was a disaster waiting to happen, but he and his partner insisted that they didn't need to take it apart to move it. It didn't sit properly on the bed of the truck and it towered over the road. We didn't even get a half mile down the road when the wind caught the door and whipped it off, sending it flying directly at me and my son who were following in my Jeep. By sheer luck, it didn't hit us or anyone else and instead shattered all over the road. They had failed to properly tie down the door. I was a nervous mess the rest of the way home. </div>

Somehow we made it the 30-minute drive to my house. We passed a police officer and it was with great relief he didn't pull them over for having an improper load. I explain to them where I want it to go. They unloaded it at the side of the house but insisted they couldn't get it to the back yard because of a low hanging tree. By this time I was done with them, so I told them to just go and I'd figure out something on my own. I might have muttered a few curse words under my breath as they left. </div>

The coop sat there with the roof off and no door, totally useless to me, for four months. I had to stare at its behemoth teal form every time I stood at the kitchen sink. It was with the gracious help of a friend that it was moved in to place and the door another friend gifted me installed. If it wasn't for his help I'd probably still be staring at the darn thing out my window. Now that it is all set up where it is supposed to be and my chickens are all settled in, this hippy girl is happy. I have four hens contently roosting in the coop and now that the days are longer all four are gifting me daily eggs. </div>

It's been about a year since I've written a blog post. I had posts I wanted to share, but it just didn't happen for a couple of reasons. One, I was overwhelmed with life in general and two, I was putting everything into growing my photography business. But I have so many things I want to share with you. Things about my little urban homestead (I'm up to four chickens now and am currently planning my garden), favorite recipes, and home and garden tips.<br />

A lot has happened in the last year. I replaced my original chicken coop and raised a chick who is now a part of our flock of laying hens. Her name is Poe, after the character on Star Wars. We thought she was a roo because of her attitude. Oops! She's just a spunky hen. She also happens to be gorgeous. Here she is:<br />

We also added another family member. Luna came to us after a dear friend of mine passed away from cancer. After a little bit of adjusting, she's now settled into life in our home quite well. She is the diva and loves soft surfaces as well as eating the leftover chicken food. She's also quite the little trooper and hangs just fine with us and our big dog, Julius when we go on adventures.<br />

I've also made some new friends, refocused my photography business, and watched my son grow taller every day. When I first started this blog he was just a little guy. Now he's a year and a half away from middle school. Ugh, time really does go by too quickly.<br />

Anyway, its good to be back. My goal for the year is to find a balance with running this little hippy home, my photography business, and this blog. This is a long title, but I didn't want to come off as ungrateful towards those who have helped me. Because I am. But there's an elephant in the room when it comes to giving to those who are struggling financially and are at the bottom rung of society's ladder. People, stop donating your expired food out of your cabinet. Quit passing on off-brand junk you wouldn't eat and expect the person in need to feel grateful for it. Be thoughtful when you pass on hand me downs and other items. Please stop giving poor people your trash.<br />

I made up a box of some off-brand mac and cheese someone gave us the other night. My son and I couldn't eat it. It didn't even taste like mac and cheese. Someone else gave us a bag of canned goods, most of it expired. My sweet neighbor recently brought over two boxes of some weirdly flavored soup his mom had picked up at a food pantry to be passed on. 24 cans of it. It's sitting in my garage. It has beef in it. We are vegetarian.<br />

Now, I'm not going to be rude to the giver. That's why I say you should receive with grace. I smiled at him and thanked him for his help and generosity. It's the right thing to do. And there were some items in the box, like snack-sized boxes of raisins, that definitely was a help.<br />

So, coming from someone who has needed a hand up one too many times, I just want to give you some pointers on giving with heart. One, take the time to find out what the person you are helping likes to eat. Include some fresh foods, even if it's just a bunch of bananas. One of the most generous and heartfelt offerings I've ever received was from another single mom who brought me a crate of fresh fruits and vegetables. If you are buying a couple of items to drop into a food collection bin, buy foods you would want to eat. And for goodness sake, don't go purging your cabinet of outdated food and pass it on. If nothing else, give money and trust that the person receiving will put it to his or her best use.<br />

If you are thinking of passing on used clothing or household items, consider these tips. If it is well worn or has a small stain or tear, don't donate it. I don't mind being given used items that I need that someone else is ready to let go of. When it's in good condition. I've gained plenty of things that I didn't have the money to buy that way. I've also had people pass on their junk to me. Uhm, thanks?<br />

In our society, lower class people are supposed to be grateful for anything they are given. Even if it is worn out, expired, cast off from someone else. But here's what you are doing when you give those kinds of things. You are reminding that person that they are last on the rung. You are telling them that they are less than and ought to be grateful for any scraps they are given. You are in a sense throwing scraps to the hog. You are perpetuating the poverty mindset that is so prevalent in society.<br />

Society says, well if you are really that poor then you'll just shut up, be grateful, and eat it whether you like it or not. Society says you aren't good enough for anything else. Maybe if you worked harder and pulled yourself up from your bootstraps, you'd be able to eat food that you enjoy and wear clothes that weren't tattered hand me downs. Society says something is wrong with you.<br />

If you are struggling and someone shows up at your door with a bag of food or items they think may somehow be useful to you, say thank you. Be grateful. But it doesn't mean you have to accept their offering if it's something you won't eat or use. Giving and receiving is a two-way street and it needs to be done thoughtfully and kindly. After all, most times they do mean well even if the giving is misplaced.<br />

Basically, dear readers, just be thoughtful in your giving and your receiving. You want your giving to be uplifting to the person you are reaching out to. Not a reminder of how hard they are struggling. If you are receiving, be honest about your needs. You don't have to blindly accept everything that is given to you because society demands otherwise. Let your needs be known. But be grateful that someone reached out to you, and be kind. Always be kind.<br />

The drop-off and pick-up line at my son's school is a winding nightmare of tired parents and car exhaust. I get that some don't live a comfortable walking distance and some are in a rush to or from work. For some, it may be physically impossible for them to walk their kids to and/or from school. But even those that live a reasonable walking distance to the school seem to drive instead. I pass the same two or three parents on foot every morning when I walk my son to school.<br />
<br />
I've gained a lot from walking my son to school. Not only do we get to spend precious time together, but we are also moving our bodies. It sets a positive tone for our day. We talk about things he's interested in. We act silly We observe what's going on around us. He holds my hand, a precious act I know he may soon grow out of. And when we get to the school I can give him an unhurried goodbye because I don't have a line of cars behind me, impatiently waiting to drop their kids off. I think it's very important to set a positive tone for the day for our kids to help them succeed, and taking the time to walk him to school does just that.<br />

I stop and get to know the crossing guards on the way back home. Now that my schedule has changed and I mostly work from home, having that adult contact is awesome. But even when I was walking back home to hop in the car and drive to work, I enjoyed slowing down and talking to these very important people keeping our children safe. I wouldn't want their job. People driving through stop signs, on their cell phones, just totally unaware of their surroundings, driving too fast. They put up with a lot.<br />
<br />
Walking him to school allows me to observe our neighborhood in a way I don't have time for when I am driving. I can pick up on which kids are struggling at home. I get to see the delight in the kids walking home when the unharvested kumquat tree is full of ripe fruit. I can actually look into the eyes of other walking parents and give them a warm greeting. Occasionally we may get chased by the chihuahua that regularly escapes her backyard. She's an annoying little ankle biter. We get to really know our neighborhood.<br />

I see a lot of newer neighborhoods building schools where it is just plain unsafe for kids to walk to school. The schools are built around buses and cars. This, to me, is sad. It's a missed opportunity for community and parent/child connections, for slowing down and really seeing your neighborhood.<br />

If you have the opportunity, walk your kid to school. Slow down your mornings. Bond with your child. Get some exercise. Observe your neighborhood with fresh eyes. Minimalism is a lifelong journey. It doesn't happen overnight and it requires a change in mindset. Deciding to downsize your life can be overwhelming. The process of eliminating those things burdening you can be outright maddening if attempted all at once. It's an ongoing process with ups and downs just like anything else in life. Right now my upside is that the inside of my home is nearly where I want it and it brings me much more peace. The big downside is that my garage is full of everything I cleaned out of my living space and I either need to hold a garage sale or haul it off before it drives me crazy.<div>

That said, there are simple things you can do, small steps to get you started. The following list is meant to help anyone in the beginning stages of minimalism build momentum and make those first baby steps toward a simpler life.</div>

<ol>
<li>Delete all social media from your phone. Yes, you read that right. We all know it's tempting to take a peek at Facebook while you've got your phone in your hand or upload your lunch to Instagram. Deleting social media will help you focus on the present moment and become more conscious of how you spend your time.</li>
<li>Clean out your email inbox. Don't just delete messages, but unsubscribe from all those newsletters that pile up and never get read. If you are like me, you will need to do this in chunks, not all in one day, because I tend to allow my inbox to get overwhelmingly full. </li>
<li>Pick one room to start downsizing. I started with my bedroom. The kitchen is also a good place to start. Break it up even smaller and pick one drawer or one cabinet to clean out. The next day pick another one until you are done and ready to move on to the next room. </li>
<li>Be honest with yourself. I mean, come on, why are you really keeping that thing you don't use or care for? Is it out of guilt? Get rid of it! Especially if it has a bad feeling attached to it.</li>
<li>Have a clear vision of the life you want to be living in your head. Do you want to move to a smaller home? Do you want to travel more? What is the end goal or goals? How minimal do you want to go?</li>
<li>If possible, get your extended family on the same page. This can be especially hard if you have kids with well-meaning grandparents, or like me, have an ex who inundates his child with toys even though I've talked to him about it. If you can't get them on the same page, you'll just have to resort to occasional purges to get rid of things that the kids are no longer interested in. Luckily, I have a kid open to minimalism as long as I don't touch his Legos.</li>
<li>With that in mind, respect the boundaries of the other members of your household. Don't be a jerk and secretly toss your partner's ugly sweater with holes that he really loves. This can be especially hard if you live with someone who leans more toward hoarding. I'm no expert there so I can't offer any advise, but if it's a normal situation and you want to get rid of it because YOU don't like it, just remember it's not yours to decide. My only exception to this rule is broken toys or other items that have become dangerous and/or irreparable.</li>
<li>Practice the 24-hour rule when tempted to purchase something you see that you want but don't need. Wait 24 hours, then come back to it. Usually, by then the excitement over the thing has diminished and you will no longer want it. I do this all the time on Amazon. I'll save it to my wishlist and go back to it later to discover I'm just not interested in it anymore.</li>
<li>When you do purchase things, buy them to last. It's not only better for your wallet, but also the environment. When you get to that point you no longer need or want it, it will still be in good enough shape to pass on to someone else or donate. </li>
<li>Find like-minded people to support your goals. Follow The Minimalists, No Sidebar, or other minimalist bloggers. Join minimalist groups. Sometimes embracing minimalism can feel like a lonely journey when the world around you seems lost in over-consumerism. </li>
<li>Learn from my mistakes and don't fill your garage with all the stuff you cleaned out of your living space. Either hold that garage sale or donate it as you clear. If you have lots of stuff, most thrift stores have trucks that will come pick it up free of charge. You truly haven't let it go if it's still sitting around in your garage, even if you don't have to look at it every day. </li>
<li>Finally, don't compare yourself with other minimalists. There is no set number of things you must whittle down to or specific house you must live in. Minimalism is about simplifying YOUR life to make room for the things YOU enjoy, so it's going to be a very individualistic journey.</li>

It's autumn. Pumpkin everything is here. Either you love all the pumpkin things or it's like a pumpkin nightmare on Halloween. I happen to fall into the love all the pumpkin things category, including the very seasonal Pumpkin Spice Latte. I'm not willing to justify spending my money at Starbucks to enjoy one, though.<br />

Don't get me wrong. Gift me a Starbucks card and I'll be there in a minute. I just don't have it in my budget.<br />

Now, down here in Texas we really haven't had any days that have felt like autumn. We are supposed to get a cold front tomorrow, so maybe, just maybe we'll be blessed with autumn temperatures for a day or two. Still, the weather hasn't stopped me from enjoying a homemade pumpkin spice latte. It's actually quite easy to make.<br />

While the recipe calls for milk, it can easily be adapted to a nondairy/vegan version. Our favorite nondairy milk right now is the Silk Vanilla Protein blend with almond and cashew milk. If you use the Silk Vanilla or any other vanilla flavored, sweetened nondairy milk, be sure to omit adding vanilla and sugar to the latte. If replacing the dairy with a plain nut milk, you'll still need to add vanilla and sugar to taste.<br />

My coffee of choice is the Deathwish Vahalla Java blend. It's a great option for this recipe since you'll want a strong coffee, but of course, use whatever blend you favor.<br />

Minimalism can feel like an abstract ideology to those who don't understand it. It can even be hard to define for people who do get it. But one misconception I see again and again is this idea that minimalism is about living without, taking a vow of poverty, of self-induced scarcity. Minimalism is something much simpler and more beautiful than that.<br />
<br />
Scarcity is actually minimalism's nemesis. They are like oil and water. Minimalism is intentional and creates peace. Scarcity, whether perceived or real, stirs up fear. Case in point, about a week after Hurricane Harvey came through Texas it was rumored that there was a gas shortage here in San Antonio. Panic took over and people started lining up at the gas pumps in droves. It was taking hours to get through the line at some stations. People were bringing many containers to hoard gas. Soon there was a real gas shortage. It lasted for several days as trucks had a hard time hauling enough gasoline to make up for the shortage caused by the mass panic.<br />
<br />
Scarcity, or the fear of, triggers hoarding.<br />
<br />
Minimalism is only about living with the things you need or want, or, as Marie Kondo says, the things that bring you joy and the things you absolutely need. This very open-ended definition can fit many lifestyles from living on the road to living in an apartment in downtown Chicago.<br />
<br />
Insist on holding onto your vast library of books? Awesome! Books bring me joy, too. Need your car for work. Of course. I wouldn't expect you to bike 10 miles in the sleet to get to work. It's your choice how you want to embrace minimalism. And that's the beauty of it. You don't have to throughout all of your stuff and go live in a grass hut with one pair of clothes and a notebook and pen..unless you want to.<br />
<br />
The only rule, if you want to call it that:<br />

RID YOURSELF OF EVERY SINGLE THING THAT WEIGHS YOU DOWN.<br />

The dusty clutter, the photos of people you don't even remember who they are, the gifts kept out of guilt. Let them go. Look at time wasters, too. I deleted the Facebook app off of my phone because I didn't want myself casually clicking on it when I was out of the house. Clean out your email accounts and unsubscribe from all those newsletters you'll never read. Hang out with people who feed your soul.<br />
<br />
Then fill that empty space with more time for family, more money for travel, time to meditate or write that novel. Things that make your heart sing.<br />
<br />
Or, leave it empty like a great big blank canvas of opportunity.<br />
<br />
It's really your choice.<br />
<br />
Oh, and please refrain from judging those who are embracing minimalism a little bit different than you. Or those who don't choose to embrace it at all. We are all doing the best we can with what we know right now. Yesterday morning I woke up with a bit of a sore throat and watery eyes. I just chalked it up to allergies. This morning I felt kind of achy, too. Add in a runny nose and a dry cough. After walking the kid to school, I laid down for a short nap...and woke up three hours later. Ugh.<br />
<br />
Still in denial, I checked the local pollen and mold count, and the air quality. Pollen and mold levels are low, air quality is good. Time to accept I have come down with a good ole' back to school cold virus. Come to think of it, the kid has had a bit of a runny nose, too.<br />
<br />
Time to bring out the big guns.<br />
<br />
As you probably know from taking yourself or a sick kid to the doctor with a slight fever and a runny nose, antibiotics don't help. But there is plenty you can do that will. Drink lots of healthy liquids such as herbal teas sweetened with raw honey, water, or coconut water. If you haven't already, cut out or decrease consumption of sugary, unprocessed foods. Get plenty of rest. Diffuse one of the following essential oils; peppermint, tea tree, lavender, lemon, or eucalyptus. Make a batch of a homemade cough and cold syrup with oregano oil, see recipe below.<br />

Antiviral Cough and Cold Syrup with Oregano Oil</h4>

4 Tablespoons fresh lemon juice</div>
<div>
1/3 cup raw honey</div>
<div>
2 Tablespoons coconut oil</div>

6-8 drops oregano oil (make sure to use a high-quality food grade oil)</div>

pinch of cayenne, optional</div>

Warm honey either in a small pot on a stove burner set to low or by measuring into a glass jar and placing into a bowl of slightly hot water. Stir in coconut oil until thoroughly mixed. Remove from heat and add in lemon juice, cayenne if using, and oregano oil.</div>

Take up to 1 Tablespoon, as needed. Give it a little shake or stir after sitting to redistribute oils. <span style="background-color: orange;"> Do not give to children under the age of one, as it contains honey. </span></div>

Store in a tightly sealed glass container. If it is going to be used up fairly quickly, there is no need to refrigerate. For long-term storage, you may refrigerate, but it will need gently warmed before using due to the coconut oil solidifying. </div>

The Hippy Home, if you weren't aware, is based out of San Antonio, Texas. I was watching updates on Harvey with great anxiety last Friday because early predictions put us in the path of this storm's catastrophic flooding. We narrowly missed disaster. For that I am grateful, but I sit here at my desk with the sun from now cleared skies shining in my window horrified at the events still unfolding in Houston and the destruction left behind in coastal towns like Port Aransas.<br />

I have posted on social media that my home is open to anyone evacuating Harvey's wrath. That still stands, so if you or anyone you know needs a place to stay please reach out to me. In the meantime, if you would like to help out the victims Hurricane Harvey left in its wake, I have compiled a list of organizations that are in need.<br />

I have a confession to make. I bought a big bag of organic kale because it was discounted by 50%. Once I got home with it, I was at a loss as to what to do with it. Usually, I stick to baby kale and mix it in with salads. But we are talking a big bag here. There are just two of us.<br />

Since I've already put in all the research, I thought I would share it with you so if you ever found yourself in the same predicament, staring at a bag of kale you have no idea what to do with, you have all the resources you need so you can use up that kale before it becomes a bag of slime in your refrigerator.<br />

I know I'm not the only one who looks around and thinks our society has collectively gone mad on many levels.<br />
<br />
Yesterday, on my way home, I decided to stop into the newest HEB grocery store because I needed to pick up some milk. It was opening day. People were filling the parking lot. I grabbed my milk and decided to look around, but after a couple of minutes decided to head straight for the checkout. It's a beautiful store, shiny and bright, filled with a wide selection of items, but is it really what we need? Wouldn't the world be better with more farmers markets, local bakeries, small mom and pop shops? Do we really need another Wal-mart, Target, corner drug store, gas station, etc.?<br />
<br />
Folks, we are rushing headlong into an environmental disaster. And we don't seem to be able to stop ourselves. We are like buffalo running ourselves off a cliff.<br />
<br />
While all of this is going on, our country is dangerously divided. People are slinging hateful words at each other, and worse. The threat of a war with two different countries is being flung about. Every day, the news brings something else negative and the divide gets wider.<br />
<br />
Then there are our own personal struggles. Right now mine is the struggle to build a thriving business while taking care of all the responsible stuff as a single parent. Some days are about flow. Some days are full of resistance and I just want to give up.<br />
<br />
It can be hard to not feel discouraged. But there are some things you can do, that I do, to help keep you in the right mindset.<br />

In fact, I don't have any social media apps on my phone, so if you want to get ahold of me when I'm away from my desk you will have to call or text. I'm looking at going further and declaring one solid day where I step back from social media. </div>

Keep A Gratitude Journal</h3>

I can't stress this enough. I have kept one for five years now. I switched from keeping a traditional journal to a gratitude journal because I felt like I was focusing too much on the negative stuff. I don't write in it every day, but I do make sure to sit down with it several times a week, especially on those days things don't feel like they are going well. It is on those days that you especially need to sit down and take stock in every positive in your life, no matter how small. Maybe it's just that you got out of bed and combed your hair. Write it down. The plus about a gratitude journal: you won't need to burn them to get rid off all the negative stuff you don't want your children to read when you are gone. </div>

I'm not sure why I haven't shared this recipe with you guys yet. It's a summer staple around here. The best part of all is it requires no cooking, thus no heating up your kitchen on an already hot day. Just chop some veggies, toss in some beans, pour on the dressing and you are ready to go! I usually serve with a side of tortilla chips.<br />

A cold bottle of Topo Chico sparkling mineral water tops it all off. Easy to find here in San Antonio, apparently it's gotten the attention from foodies all around the country. It's bottled in Monterrey, Mexico, so it's no surprise that we've known about it here in south Texas for quite some time. After all, the drive to the border of Mexico is shorter than the drive to Dallas. But, I've strayed off topic. Back to the Black Bean and Corn Salad recipe.<br />

If you want your dressing slightly sweetened, add a little honey to taste, or agave to keep it vegan. You don't have to use fresh corn. I use frozen sweet corn straight out of the bag. I don't even worry about thawing it out.<br />

It amazed me how much stuff one can own. According to a March 2014 article in the Los Angeles Times, the average U.S. household contains 300,000 items. 47% of all toys and books are owned by children in the U.S., who only make up 3.7% of the children on the planet. It feels like 80% of those toys are in my son's room right now. Ugh. Well, to be fair, it's mostly Legos, but still...<br />
<br />
The path to minimalism is a peeling of the onion. Layer one, all the stuff. Step one, the initial purge. This step can be a bit overwhelming. Where do you even begin? My suggestion is to start with the obvious. What stands out as a burden to you? What brings bad memories or sits around collecting dust? Put it in a box and get rid of it. Donate it to a local thrift shop, a homeless shelter, a women's and children's shelter. Hold a garage sale.<br />
<br />
My initial purge was brought about by the end of a tumultuous marriage. I got rid of everything that reminded me of his presence. That was a really easy purge, I admit. I had a big garage sale and made enough money to pay the rent.<br />
<br />
During the second purge, you will likely dig a little deeper. By this point, there may be some things you have been holding on to that suddenly seem trivial or silly to keep. Why do I have enough wine glasses to throw a party when I am more likely to just have one or two friends over? What am I keeping this heavy winter coat for when it never gets cold enough to wear it where I live?<br />

Peel that onion back. Peel some more.<br />

The hardest part? Fighting back all the stuff well-meaning people in your life will gift you and (especially) your children during the holidays. If you find the answer to that, get back to me.<br />

I'm in the process of yet another purge. I'm peeling away to get down to the core of what I actually need to own and what I want to keep around because it makes me happy. I've cleaned out a dressing table that mostly served as a place to catch dust, pile unfolded laundry, and just generally gather a messy junk heap that the cat enjoyed pushing into the floor. I have it for sale and I really hope a buyer comes along quickly because it's already becoming covered with stuff once again.<br />
<br />
I've purged my kitchen yet again until I'm mostly down to the basics. I am left with one dilemma in the kitchen. I have two sets of dishes. One is a collectible and pretty. The other is basic every day and chipped from misuse. My inclination is to sell the collectible set and keep the set I don't mind getting banged up, but the other set brings me more joy. These are the kinds of dilemmas you will find yourself in as you minimalize your possessions, but don't get stuck on them. For now, I'll keep both and figure it out later.<br />

Minimalizing can take time. Most minimalists don't begin by giving away or selling everything overnight to live out of a bus with their suitcase full of clothes. It's a slow removal of what doesn't work for you. I've been on an obsession with grain bowls (watch for an upcoming blog post). If you aren't familiar with them, they usually start with a grain, most often rice, and are topped off with a wide array of vegetables. They are quite versatile and can be created in endless flavor combinations. I decided to create a Southwest grain bowl using barley. I topped it with roasted sweet potatoes, corn, avocado slices, and black beans. To make it even more flavorful, I whipped up a batch of Cilantro Lime Dressing to drizzle over the vegetables. My picky eater devoured it.<br />
<br />
No doubt this dressing would be great on refreshing summer salads, too. Mix it up in a wide mouth jar so you can easily refrigerate left overs.<br />

Cilantro Lime Dressing</h3>

<li>1 cup plain Greek yogurt</li>
<li>2 TBSP mayonnaise</li>
<li>3-6 TBSP milk</li>
<li>1/2 cup finely chopped cilantro</li>
<li>1 clove minced garlic</li>
<li>1/4 tsp cumin</li>
<li>2 pinches cayenne pepper</li>
<li>salt and pepper to taste</li>
<li>2 TBSP fresh lime juice</li>
</ul>

Add all ingredients to a wide mouth jar. Mix until smooth. Add more milk a tablespoon at a time if mixture is too thick. Cover and refrigerate before using. </div>

It hurt to move this morning. Yesterday, I really pushed myself hard with overhead presses during my crossfit class. My shoulders were in intense pain. I've been doing crossfit for about a year and a half, so it's not the first time my muscles have complained after a workout. It's almost a constant, actually.<br />

It obviously doesn't take a grinding workout to leave you with aching muscles, though. I've woken up with tight, aching neck muscles just from sleeping wrong.<br />

I love my foam roller. I use it regularly. It's great for working out tight leg and thigh muscles, as well as your upper back and shoulders. You can find them just about everywhere these days. I bought mine off of Amazon, but I've also seen them at Target and some discount stores. I've included the following video to with some good tips on how to use a foam roller.<br />

The Hot Pepper Sha-Bang muscle stick was a life saver for me after I injured my back last December. I was looking for natural pain relief when my friend Crystal posted about the muscle stick on her Facebook timeline, so I gave it a try. Capsaicin is the soothing ingredient, radiating a nice, warm feeling across sore muscles. I'd put it on the injured area before a workout. When my body heated up, so did the hot pepper stick. Magnesium </h3>

You can use either oral magnesium tablets or take a nice, warm bath with magnesium salt, more commonly known as Epsom Salt. Add about a cup of Epsom Salt and soak for about 15 minutes. For the extra benefit of relaxing the muscles and easing inflammation, add about 3 drops of lavender oil to the water.<br />

If your body is deficient in magnesium, it can cause muscle soreness and cramps. Keep foods like almonds, sunflower seeds, cashews, and pumpkin seeds on hand for a healthy snack high in magnesium. A good magnesium supplement can help, too. I can tell when my body isn't getting enough magnesium when I start craving chocolate. </div>

A massage after an intense workout can not only make you feel better, but it also helps with muscle recovery by decreasing inflammation. So go ahead and book that massage after your next workout. Just a short, 10 minute massage is all that is needed to feel the benefits, however, book me for the whole hour! Over the counter anti-inflammatory drugs like aspirin and ibuprofen may bring relief, however they have been shown to cause heart, stomach, and kidney issues. So toss out the pills and use one of these proven natural choices for pain relief. Oh, and be sure to drink plenty of water. Dehydration can cause muscle cramping and soreness as well.<br />

I've always felt a calling toward creating. Painting, photography, writing. I was always told those weren't legitimate choices. People like to throw out the much overused "starving artist". Then they pick some poor artist or writer who remained unknown until his or her death to use as an example. You'll end up like that, they'd say. So I've always held on to the belief that as long as I pursued these callings I wouldn't make any money from it. And, guess what? I've never really earned any money from any of these endeavors. I mean, yeah, I've earned a little here or there, but not really what I was worth. Because I wasn't expecting to.<br />
<br />
Our American society, and perhaps all societies built on similar economic systems, holds that the only worthy way of earning a living is by sacrificing your time and your dreams. It's the American dream you are supposed to be going after. Big house, nice car, pretty things. You get a J-O-B working for someone else at least 40 hours a week. If you are lucky, it's something that both pays well and brings some level of satisfaction. If you are lucky. If not, you slog away your days for someone else just so you can keep a roof over your family and food on the table. In our society it's never been about what brings you joy. It's how much money you make and all of the things that you can buy with that money.<br />

Earn a living. The word "living" should never be associated with monetary worth. That's where we have gone horribly wrong. You earn an income for the deemed value of your work. That value often seems arbitrary to the whims of society, e.g. starving artist.<br />
<br />
There is another way.<br />
<br />
Minimalism and the tiny house movement are a part of this revolution to rethink and redefine what it means to earn a living. If you have less stuff, you need less money to maintain or replace that stuff. You can work less or chose work not by how much it pays, but by how much joy it brings you. That is liberating, especially for someone who doesn't fit in with this consumerist mold.<br />

Someone like me.<br />

And now here I am J-O-B less. Falling into the same traps. Hearing those old voices. You can't make a living blogging. No one wants to buy your art. The photography market is over saturated. You can't earn a living that way. You need to get a real job. Rent is coming due and you are broke. Get real.<br />
<br />
I've given up on those dreams too many times. I quit art school. I stopped painting for a while. I stopped writing, stopped trying to get published. I gave up my photography business because the ex told me I needed to get that "real" job. Start. Stop. Start. Stop.<br />
<br />
I'm tired of stopping. I'm angry at those voices. It's time to prove them wrong.<br />
<br />
I've read about people young and old who sold everything to live a mobile life. Some earn a living through their computers. Some live off of the funds from selling everything that held them down. I've read about people who live off a small plot of land, modern day homesteaders who need very little from the outside world. There are the urban minimalists who live in small apartments and use their time and money on experiences instead of filling up an oversized house with stuff. These people are truly redefining what it means to earn a living. If they can do it, so can I. If they can do it, so can you.<br />
<br />
Embrace your joy and earn a livable income. The two aren't mutually exclusive, contrary to what we've been taught.<br />

I fully admit I've been struggling. June was a rough month for me. Sometimes when you decide to do something big, fear can grip your heart with some big old ugly claws. I've been stuck inside my head too much, worrying about not being able to cover the bills, taking myself too seriously, and generally falling into a self absorbed funk, which accomplishes nothing towards being able to actually pay the bills and left me feeling highly anxious.<br />
<br />
I know I'm not the only one struggling these days, and our current political environment doesn't help. The news looms large with violence and negativity. Our world is a mess.<br />

A couple days ago I watched the video, My Turning Point, by Kristina Kusmic (aka Truth Bomb Mom). I found myself sobbing loudly and uncontrollably. I haven't allowed myself a good, healthy cry like that in a long time. It really hit home. I'll post the video at the end because I want to get to the challenge, but it was something I deeply related to and got me thinking, What is one little thing I can do right now? What am I good at?<br />
<br />
I like to think I'm good at blogging. I can use that platform to help others.<br />
<br />
So, the 21 Days of Kindness Challenge was born, just a few hours ago actually. Starting tomorrow, July 3, 2017, I want all my readers to perform one mindful act of kindness every day for 21 days (I will be participating, too) and come back here or to the <a href="https://www.facebook.com/groups/193153811096764/">Hippy Home One Simple Change Challenge Group</a> and share your act of kindness. Buy a cup of coffee for a stranger. Put change in someone's parking meter that's about to expire. Contact that friend you haven't talked to in a while and let them know you are thinking about them. Pick up trash in your neighborhood. Volunteer your time. Reach out to an elderly neighbor. There are so many ways to express kindness that don't involve money. Think outside of the box. And if you are having a particularly rough time, save one of those 21 days to treat yourself with kindness.<br />

Share this post everywhere. Spread the love. Let's see how many people we can get on board. The world needs more kindness and change starts with one small act at a time. With many small acts from many people, amazing things can happen. The world may be a mess, but there is still beauty out there. Kindness and goodness still exist. Let's do this!<br />
